Updates on Angylica Inspiration
I just realised that I have not updated dated my blog since creating it early this year. It has been a long long time and many things have happen during these few months.
For those who have been to my class, I just want to let you know that I am still with Palate Sensations but I am no longer teaching at Robinsons, Centerpoint. We have moved to Biopolis, Chromos Building. Please come and visit me when you are there.
During this year end period, I am actually having some Xmas goodies classes that you may be interested
20/11: 10 to 1pm -- Christmas fruit cake class (where i will be teaching both light and dense version of the cake)
21/11: 2 to 5pm -- Christmas Cookies (Piped shortbread, vanilla horns, biscotti and sable hollander)
22/11: 7 to 10pm -- Monday bake (Chocolate Truffle, Mini Chocolate Tart and Double Chocolate cake) A light dinner will be served before the class
28/11: 2 to 5pm -- Christmas Cookies 2 (Diamantes, gourmet chocolate chip, melting moments and coconut kisses.)
29/11: 7 to 10pm -- Monday bake (applesauce-spice cupcakes salty caramel cupcakes cherry and almond cupcake) A light dinner will be served before the class
05/12: 2 to 5pm -- Christmas Log Cake (Almond meringue with cointreau and chocolate mousse)
11/12: 10 to 1pm -- Chocolate Indulgence (Chocolate Parfait, Chocolate friands, White chocolate and Raspberry muffins)
12/12: 2 to 5pm -- All things chocolate (chocolate truffles, mini chocolate tarts, Florentines (almond based chocolate cookie) and coconut kisses)
13/12: 7 to 10pm -- Monday Bake, just in time for Xmas (devil's food cupcake banana and walnut coconut cupcakes) A light dinner will be served before the class

Classes for March 2010
Here are the classes that has been scheduled for March
4 Weeks Intermediate Baking Skills - March 2010Weekend ClassesFor those who have completed our Basic Baking classes or for those who know how to crack an egg or two, these series of classes are great for building your baking skills. Participants will be working individually and in teams. Take home your very own creations at the end of each lesson.
Week 1 (6/3/10 : 2-5pm) - Simple cakes: Madelines, Gateaux Weekend (pound cake with citrus glaze) and chiffon cake
Week 2 (13/3/10: 2-5pm) - Tart out: Tart tatin, chocolate tart
Week 3 (20/3/10: 2-5pm) - Mousses: Raspberry mousse and chocolate mousse
Week 4 (27/3/10: 2-5pm) - Plated dessertsParfait, bavarois, poached pear

6 Weeks Basic Baking Skills - March 2010 These series of 6 classes introduce the novice baker to the joys of baking. Build your skills and confidence with these easy to make and popular cakes & tarts.
Week 1 (7/3/10: 2-5pm) - Scones (Plain scones), Biscuits (piped shortbread), Genoise Sponge with chantilly cream
Week 2 (14/3/10: 2-5pm) - Quick cakesBanana cakes, muffins, marble cake and brownie
Week 3 (21/3/10: 2-5pm) - Profiteroles and Eclairs Choux Pastry, Chocolate sauce, Chocolate frosting and pastry cream
Week 4 (28/3/10: 2-5pm) - Tarts Lemon meringue tart and fruit tart

Cakes for friends
During 1 of the dinners I have with my friends, they asked if I am keen to do some cakes for them. It seemed like Feb is a month for birthdays. Bee Leng alone wanted 3 cakes as herself, her husband and her son all celebrate their birthdays in Feb. Lisha's husband also celebrate his birthday in Feb too.
After some chatting, I was convinced by them to make the cakes for their family. Here are the cakes that I have made for them.

Basic Baking lesson 2
Yesterday was the 2nd lesson for the basic baking class for 2010. I run this class at Palate Sensations, 4 times a year. I did not take any photos of the 1st basic baking class, as that was the busiest class. All the students are new to me and also some are new to baking. The 1st class was all female. We actually had a good time although we were rushing for time.
The 2nd class was also a busy class, with 4 quick cakes to bake. I thought I will give them a kick start by melting the chocolate and butter for the brownies in advance. Everyone came early and was very excited to get. Menu for the class is Brownies, Raspberry and white chocolate muffins, Banana cake and Marble Cake. 4 cakes, 13 students and 2 ovens, is it possible to finish in 3 hours? Well, we did it. Here are some of the photos from the class. Enjoy.

Introduction
Hi all,
I have just graduated from Le Cordon Bleu Sydney, sometime July 2009, in both Cuisine and Pastry. After which, I hae come back to Singapore and work for a restaurant as a pastry chef for 2 mths and proceed to teach at Palate Sensations as a pastry chef. Some of you may have read my previous blog http://chefangy.blogspot.com/, where I blog about my life in LCB.
This blog is more of NOW. What I will be doing now and in the future. I will feature blogs of my classes, food that I made and also places I have dined in. Please stay tune for more. And please feel free to give your comments. :P Happy New Year!
